In 1932 our family started making panettone and pandoro in Castelfranco Veneto (a charming village in the Veneto region in the North East of Italy), using a traditional method handed down from generation to generation. Each panettone requires 48 hours of long leavening, guaranteeing a dough with a sweet and enveloping aroma! The mother yeast: the heart of our products. This precious ingredient, which we have been guarding since 1932, gives our cakes special qualities and preserves their organoleptic characteristics, such as fragrance and flavour, for a long time. In addition, it gives them a natural softness!
